Sample the food of champions at Taste Sensation 08

Usain Bolt became one of the fastest men on earth at this years Olympics on a diet of Jamaican food - and now people in Trafford can sample some authentic Jamaican delights.

The 2008 Taste of Trafford 'Taste Sensation' event on Sunday 21 September will be hosting a new recruit – Old Trafford’s M &M's Caribbean Spice Cafe andTakeaway.

M&M's, who have taken part in many festivals across the country and are a firm favourite with local footballers  will be cooking up some genuine Jamaican dishes at the event such as Jerk chicken and Jamaica's national dish - Ackee and Saltfish.

Plus keeping with the Jamaican theme, Old Trafford Bakery will also be at the show amongst the producer stalls with their range of Jamaican speciality breads including banana cake, coco bread, fruit buns and Toto bread.

In the mean time, why not get into the Caribbean spirit at home and try this recipe for Ackee and Saltfish:

Ingredients
One packet of skinless boneless salt fish (400g)
Two tins of Ackee drained
One large onion sliced
Two spring onions chopped
Three fresh tomatoes diced
Half red Capsicum Pepper (strips)
Black pepper
Scotch Bonnet Pepper (to taste not too much - they're very hot)
Vegetable oil and a sprig of Thyme

Method

1. Bring salt fish to the boil in fresh cold water for four to five minutes, Refresh in cold water and drain flake fish and set aside. 
2. Sauté both onions and red pepper in a bit of oil.
3. Add tomato, pepper and Thyme.
4. Add flaked salt fish and drained Ackee-gently fold together to blend simmer for five minutes and serve hot.


Traditionally served with ground food for dinner ie Yam, boiled green bananas etc, it can also be served with rice and peas. Ackee and salt fish can also be cooled, refrigerated and reheated for breakfast with fried dumplings.

All ingredients for this recipe are available from Cariba West Indian store on Ayres Road, Old Trafford, or from most stores selling caribbean ingredients.
